A Chicken Fajita recipe that is so simple and delicious, it will blow your mind.  The chicken and fresh bell peppers are sauteed and seasoned with chili flakes, paprika, and parsley, etc. With this meal, you can have a healthy and easy dinner on the table in 30 minutes!

 

For me, there is nothing better than a quick and easy dinner recipe for when I don’t have a lot of time to cook, and this chicken fajita definitely fits the bill.  The choice of seasoning in this dish makes it tastes like something you’d order at a restaurant, except it’s better for you and CHEAPER!

 

The chicken is first marinated and then pan-fried on high heat to perfection leaving it flavorful, tender and juicy.

What Is Chicken Fajita?

A Fajita in Mexican cuisine is any grilled meat that is usually served as a taco on a flour or corn tortilla.

 

Is Chicken Fajita Good For You?

It is absolutely good for you.  This Chicken Fajita is packed with nutritious ingredients, lean protein, and lots of fiber.

Chicken breast is an excellent source of low-fat protein. Protein helps your body to build and maintain muscle mass. Chicken breast is also a very good source of selenium, phosphorus, vitamin B6, and niacin.

 

Bell peppers are a rich source of vitamin C, containing 97% of the Daily Value in a 100 gram reference amount. Red bell peppers have more vitamin C content than green bell peppers.

What Goes In Chicken Fajita?

  • Chicken Breast or Boneless-Skinless Chicken Thighs (Cut into Strips)
  • Bell Peppers (Any color of your choice cut into strips)
  • Red Onion (Cut into thin strips)
  • Avocados (peeled, seeded and sliced)
  • Juice of one lime or lemon
  • Olive oil
  • Garlic powder
  • Coriander powder
  • Salt
  • Black pepper
  • Chili powder OR chili flakes
  • Dried parsley

How Do You Make Chicken Fajita?

  1. Make a marinade using lemon juice, coriander powder, salt, chili powder, black pepper, and dried parsley. 
  2. Mix the chicken strips and coat thoroughly with the marinade and leave in the fridge to marinate for at least 30 minutes. 
  3. Heat olive oil in a large skillet over medium heat. In that, cook and brown the marinated chicken till cooked and browned to perfection; about 8 minutes. Drain from the skillet and set aside. 
  4. After the chicken is cooked to perfection, sauté the chopped veggies in the pan till nicely cooked to your liking; for me, about 5 minutes.  Season with salt and pepper. 
  5. Add back the cooked chicken and mix everything well for a minute or so. 
  6. This final step is the easiest and that is to top your Chicken Fajita with your favorite topping and dinner is served!

How Do You Cook Chicken For Chicken Fajita?

The best way to cook chicken for Chicken Fajita is to first marinate, then sear it in oil in a hot pan until browned and cooked through. Be careful not to overcrowd your pan; if you add too much chicken at once, the chicken will steam instead of brown.

 

Best Toppings For Chicken Fajita

  1. Cheese (Any cheese of your choice will do)
  2. Salsa ( Tomato salsa is perfect for chicken fajita)
  3. Sour Cream. (It is perfect to cool things down when the heat gets hot).
  4. Tzatziki Sauce
  5. Guacamole (Or Sliced Avocado).
  6. Beans and Rice

 

 

Storing and Freezing leftover Chicken Fajita

Leftovers can be kept for three to four days in the refrigerator. Be sure to eat them within that time. After that, the risk of food poisoning increases. If you don’t think you’ll be able to eat leftovers within four days, freeze them immediately for upto 3 months.

 

Thawing Leftover 

If possible, place the frozen Chicken Fajita in the refrigerator the night before you plan to eat it, so it can defrost.  Alternatively, leave it on the kitchen countertop till fully thawed.

 

Reheating Leftovers

Place the thawed Chicken Fajita in a large pan with a touch of oil and cook until heated through; about 5 minutes.

 

More Tips 

  • Not a fan of paprika? You can try some sliced carrots.
  • This recipe can easily be doubled and is a great meal prep option.
  • For a different flavor, you can use thinly sliced flank steak instead of the chicken.
