This broccoli apple salad uses fresh broccoli as the main components. It is a refreshing salad that uses a combination of vegetables and fruits all bathed in a delicious but straightforward dressing making it worth trying. Also, you need no animal products for this recipe.

Ingredients
400gramsBroccoli florets
2largeRed paprika
2 Apples
1RedOnion
30mlOlive oil
1teaspoonSalt
1/2cupSunflower seeds
30mlLemon juice (freshly squeezed)
2teaspoon Honey
1teaspoonBlack pepper (freshly ground)
1 1/2tablespoonsMustard(substitute with Mayonnaise)
Instructions
To prepare the dressing, add the olive oil, lemon juice, honey, Mustard, salt, and pepper in a small bowl and whisk very well. Set aside for later.
Wash broccoli, paprika, onion and apples and pat dry with a kitchen napkin.
Chop all the vegetables and fruits as finely as you can and add in a large bowl
Proceed to top the salad with your sunflower seeds.
Conclude by adding the dressing and mix well.
Your fresh broccoli apple salad is ready to serve.
Notes
Easily make this salad in a food processor by pulsing the vegetables and fruits a few times until you achieve the right consistency.Toast the sunflower seeds lightly in a pan on low heat for about 2 minutes if you prefer.
