Green Seasoning Marinade is a flavorful marinade made up of onion, ginger, garlic, and herbs (leek, celery, basil, parsley, etc). It’s the base to a lot of African dishes and by preparing it in advance; you can significantly reduce the preparation time for many recipes.

Ingredients
celery (both stalk and leaves)
parsley
leek (or green onions)
basil
ginger
cooking oil (or water)
Instructions
Clean, and roughly chop all the vegetables.
Add in a blender and add cooking oil.
Blend into your preferred consistency. (Blend in batches to avoid overworking your food processor)
Notes
If using water instead of oil, add just enough to facilitate easy blending.
Keep this marinade in an air-tight container in the fridge for 1 to 2 weeks.
Freeze in an air-tight container for up to six months in the freezer
