Crispy KFC style Fried Chicken - that is so flavorful and juicy with a crispy herb-infused coating that breaks in your mouth with every single bite. The chicken is seasoned with a selection of spices that are just perfect. It is then drenched overnight in buttermilk for a tender and juicy bite. Finally, it is deep-fried to perfection for a crust that resembles the original KFC texture.
Mix the marinating ingredients in a bowl, to begin with, namely: buttermilk, onion, salt, bouillon powder, garlic, and ginger. Also, paprika, black pepper, turmeric and mixed herbs.
Next, add the chicken pieces and marinate in the fridge for at least 2 hours, preferably overnight.
In a separate bowl, mix all the dry coating ingredients namely: flour, cornstarch, salt, paprika, garlic powder, onion powder, cayenne pepper, herbs and white pepper.
Before frying, remove chicken from the fridge and let it come to room temperature for 1 hour.
When ready to fry, dispose of the excess marinade and the onion chunks.
Add the beaten egg and flour coating mixture to the chicken pieces and mix well. Set aside for about 10 minutes.
Meanwhile, heat oil in a large pot with high sides or a deep fryer to 180°c. To be sure the oil is hot enough, place the tip of a wooden skewer in the oil. If it sizzles, then oil is ready.
Now, put the chicken in the hot oil with the help of tongs. Fry the chicken in batches, and turn every 3 to 4 minutes, until lightly brown. It will take about 15 minutes.
Remove from the oil and set aside.
Re-heat the oil and fry the chicken a second time for about 5 minutes.
Finally, drain the chicken on a cooling wire rack and serve.
