Creamy and Flavorful Lentil Soup Recipe

This Lentil Soup is one of my go-to when losing or maintaining weight. Many dieters are forever looking for something to keep them satiated in between meals, and there’s nothing like a warm bowl of lentil soup to fill up on.


You will be in pure disbelief how incredibly delicious this Lentil Soup is, you will go back for seconds or thirds and even enjoy a bowl as a great afternoon snack!

It’s not just me! My family are now HUGE fans of Lentils and CRAVE it.

 

 

What Is Lentil Soup?

Lentil Soup is a soup based on lentils; it may be vegetarian or include meat, and may use green, brown, red, yellow or black lentils, with or without the husk.  This Soup originates from the Middle East and Europe.

 

The Best Lentils For Lentil Soup

Lentils come in a rainbow of colors. Red lentils, green lentils, brown lentils, yellow lentils and more!

For this particular Soup we are using green lentils,  but you can really use any lentils you have at hand for this soup recipe. They are all great and have the same benefits.

 

Do You Have To Soak Lentils Before Cooking Them?

Dried lentils do not need to be soaked before cooking! Unlike dried beans, dried lentils cook pretty fast. However, just like dried beans, lentils have lectins that get broken down when soaked before cooking, making them easier to digest.

Lentils’ ability to cook fast makes them ideal for the busy family. The variety in color, the health benefits, flavor and ease of use are my favorite things about lentils.

  • Onion

  • Chili flakes OR Chili Powder
  • Curry powder
  • Coriander powder
  • Salt
  • Seasoning powder
  • Fresh/dried parsley OR coriander

How to make Creamy Lentil Soup

  1. Heat the olive oil in a large pot. Once the oil is shimmering, add the chopped onion and fry till golden; about 3 minutes. 
  2. Add the seasoning and cook until fragrant while stirring constantly; about 30 seconds.

 

 

  1. Pour in the diced tomatoes and cook for a few more minutes, stirring often, to avoid burning.
  2. Add the carrots and celery and stir everything well for 2 minutes. 

 

 

  1. Rinse the lentils with water and add to the pot along with dried parsley or coriander, water, and coconut milk.
  2. Raise heat and bring the mixture to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 30 to 35 minutes, or until the lentils are tender but still hold their shape. 

 

  1. Carefully transfer 1/4 of the soup to a blender, taking care to let the steam escape (cover escaping steam with a kitchen towel).
  2. Blend till smooth and pour the puréed soup back into the pot. ENJOY!

Lentils are loaded with protein, potassium, zinc, and copper.  Also, magnesium, folate, dietary fiber, manganese, and vitamins B5 and B6.  Aside from the many health benefits, lentils are also pretty low in calories.

Is Lentil soup good for weight loss?

Absolutely! This Lentil Soup recipe contains protein to help keep you full for a longer period of time, has minimal fat content, is fairly low in calories for a protein-based soup and is suitable as a snack as well as the main meal.

 

How To Refrigerate and  Freeze Lentil Soup

To Refrigerate, transfer to an air-tight container and store in the fridge for up to 4 days. 

To freeze, transfer to a freezer-suitable air-tight container and freeze for up to 3 months. 

 

Always use glass containers to store leftovers since they don’t give up residues to the food. If using a glass container to freeze leftovers, make sure it is freezer-suitable as other glass containers may crack when frozen.

 

Thawing Leftovers

Place the frozen Lentil Soup in the refrigerator the night before you plan to eat it, so it can defrost.  Alternatively, leave it on the kitchen countertop till fully thawed.

 

How To Reheat Leftovers

To Microwave: Transfer the Lentil Soup to a microwave-safe plate. Warm it in the microwave for 3 to 5 minutes till piping hot.

To Reheat in Saucepan:  Transfer the soup to a saucepan and simmer on medium-low heat till piping hot; about 5 minutes. Stir occasionally.
