Waxy or medium-starchy potatoes are the best to use for this recipe. It is because they hold their shape well after cooking making them great for frying.
How to make crispy German fried potatoes:
- I start by peeling my potatoes. Then, I chop them in bite-size cubes and wash thoroughly.
- Secondly, I add them in a pot of cold water and bring to a boil. Once boiling, I cook for about 3 minutes. In this case, you want the potatoes 1/2 way done.
- After that, I heat some olive oil in a frying pan. Once that heats up, I add a cube of butter and allow that to warm up too.
- Finally, I fry my parboiled potatoes for 10 minutes on medium heat. I toss them regularly for even browning.
- At this point, I add the chopped onions. Then, I fry for another 5 minutes continually tossing for the perfect crispy crust.
Tips and Tricks for the Best German Fried Potatoes
- Keep in mind that these potatoes lose a great deal of volume as they fry. So, adjust portion accordingly.
- Keep the heat on medium for the crispiest and softest skillet fried potatoes.
- This recipe also works well with leftover boiled potatoes.
- Add bacon if desired. Fry the bacon till golden brown, drain, and re-introduce to the cooked potatoes.
Crispy German Skillet Fried Potatoes With Onion and Garlic
Ingredients
- 6 large potatoes
- 1/4 cup olive oil
- 2 tbsp butter
- 1 tsp sea salt
- 1 medium red onion
- 1/4 tsp black pepper (freshly ground)
Instructions

- Boil two liters of water on high heat.
- Add the potatoes in the pot of cold water and bring to a boil. Once boiling, cook for about 3 minutes. In this case, you want the potatoes 1/2 way done.
- Drain the potatoes completely.
- After that, heat olive oil in a frying pan. Once that heats up, add butter and allow that to warm up too.
- Add the parboiled potatoes and the salt to taste. Fry for a total of 10 minutes on medium heat for the perfect crispy crust. Toss them regularly for even browning.
- Finally, add the chopped onion and fry for another 5 minutes continually tossing.
- Season with black pepper, toss and serve.
Notes
