The Simple Salad Dressing

The dressing is so divine and straightforward; you will love it.  The fresh and tangy taste of lemon, paired with olive oil and mustard add so much freshness and flavor to this simple salad than anything else.  Add a dash of freshly ground pepper for a little kick and salt to taste.

Making the Salad Dressing

To make the dressing, add olive oil, mustard, salt and pepper in a mason jar and top with a generous squeeze of fresh lemon juice.  Give the mixture a quick shake and drizzle it all over your broccoli apple salad.  Store in the fridge for an hour for a more intense flavor.

 

Making Broccoli Apple Salad

Firstly, wash all your vegetables, dry and chop to your preferred sizes.  Wash the apple and chop too.

Mix the salad ingredients in a bowl and top with some Sunflower seeds.  Finally, Drizzle the salad dressing on top, mix and chill for one hour.  Serve and enjoy.

Broccoli Apple Salad

Ingredients

  • 400 grams Broccoli florets
  • 2 large Red paprika
  • 2 Apples
  • 1 Red Onion
  • 30 ml Olive oil
  • 1 teaspoon Salt
  • 1/2 cup Sunflower seeds
  • 30 ml Lemon juice (freshly squeezed)
  • 2 teaspoon Honey
  • 1 teaspoon Black pepper (freshly ground)
  • 1 1/2 tablespoons Mustard (substitute with Mayonnaise)

Instructions

  • To prepare the dressing, add the olive oil, lemon juice, honey, Mustard, salt, and pepper in a small bowl and whisk very well. Set aside for later.
  • Wash broccoli, paprika, onion and apples and pat dry with a kitchen napkin.
  • Chop all the vegetables and fruits as finely as you can and add in a large bowl
  • Proceed to top the salad with your sunflower seeds.
  • Conclude by adding the dressing and mix well.
  • Your fresh broccoli apple salad is ready to serve.

Notes

Easily make this salad in a food processor by pulsing the vegetables and fruits a few times until you achieve the right consistency.
Toast the sunflower seeds lightly in a pan on low heat for about 2 minutes if you prefer.
