Ingredients
  • 400 grams Broccoli florets
  • 2 large Red paprika
  • 2 Apples
  • 1 Red Onion
  • 30 ml Olive oil
  • 1 teaspoon Salt
  • 1/2 cup Sunflower seeds
  • 30 ml Lemon juice (freshly squeezed)
  • 2 teaspoon Honey
  • 1 teaspoon Black pepper (freshly ground)
  • 1 1/2 tablespoons Mustard (substitute with Mayonnaise)
Instructions
  1. To prepare the dressing, add the olive oil, lemon juice, honey, Mustard, salt, and pepper in a small bowl and whisk very well. Set aside for later.


  2. Wash broccoli, paprika, onion and apples and pat dry with a kitchen napkin.



  3. Chop all the vegetables and fruits as finely as you can and add in a large bowl



  4. Proceed to top the salad with your sunflower seeds.



  5. Conclude by adding the dressing and mix well.



  6. Your fresh broccoli apple salad is ready to serve.

Recipe Notes

Easily make this salad in a food processor by pulsing the vegetables and fruits a few times until you achieve the right consistency.

Toast the sunflower seeds lightly in a pan on low heat for about 2 minutes if you prefer.
