  1. Use All-purpose flour and cornstarch mixture in your coating for the crispiest crust.
  2. Use high smoke point oil like vegetable, canola, or peanut oil. The oil should maintain a temperature of about 180°C /350 degrees F for best results.
  3. Fry in a large pot with high sides to avoid splattering of the oil. Also, use tongs to lower the chicken pieces into the hot oil.
  4. Whenever frying chicken, do it in batches.  In other words, don’t overcrowd your pot.
  5. The cooking time will depend on the size of the chicken pieces.
  6. Cook your chicken to an internal temperature of 165 degrees Fahrenheit. Use a meat thermometer for best results.

  • 2 kg chicken cut into small pieces
  • 300 ml buttermilk
  • 1 tsp salt
  • 3 red onion roughly chopped
  • 2 tsp bouillon powder
  • 1 tsp minced garlic
  • 3/4 tbsp minced ginger
  • 3 tsp Mixed herbs (thyme, basil, oregano, etc.)
  • 2 tsp black pepper
  • 1 1/2 tsp white pepper
  • 1 tsp paprika powder
  • 2 tsp Sugar

Chicken Coating ingredients

  • 200 g all-purpose flour
  • 100 g cornstarch
  • 2 tsp baking powder
  • 1 Egg
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 3/4 turmeric powder
  • 1 tsp white pepper
  • 3/4 tsp onion powder
  • 2 tsp mixed herbs (thyme, basil, oregano, parsley, etc.)

Instructions for making crispy fried chicken

  1. Mix the marinating ingredients in a bowl, to begin with, namely: buttermilk, onions, salt, bouillon powder, garlic, and ginger.  Also, paprika, black pepper, turmeric and mixed herbs.
  2. Next, add the chicken pieces and marinate in the fridge for at least 2 hours, preferably overnight.
  3. In a separate bowl, mix all the dry coating ingredients namely: flour, cornstarch, baking powder, salt, garlic powder, turmeric, onion powder, herbs and white pepper.
  4. Before frying, remove chicken from the fridge and let it come to room temperature for 1 hour.
  5. When ready to fry, dispose of excess marinade.
  6. Add the beaten egg and flour coating mixture to the chicken pieces and mix well.
  7. Set aside for about 10 minutes.
  8. Meanwhile, heat oil in a large pot with high sides or a deep fryer to 180°c. To be sure the oil is hot enough, place the tip of a wooden skewer in the oil.  If it sizzles, then oil is ready.
  9. Now, put the chicken in the hot oil with the help of tongs. Fry the chicken in batches, and turn every 3 to 4 minutes, until lightly brown. It will take about 15 minutes.
  10. Remove from the oil and set aside.
  11. Re-heat the oil and fry the chicken a second time for about 5 minutes.
  12. Finally, drain the chicken on a cooling wire rack and serve.
